Emiliano's new Vegan/Vegetarian menu is brimming with exciting and bold choices, a far cry from the typical grilled vegetable plate often offered to those with dietary restrictions. Casa Velas' Executive Chef Eliseo Ibarra has crafted a superb selection of appetizers, soups, salads, pastas, entrees, and desserts that will leave guests pleasantly full, yet longing to try more. Complementing the new Vegan/Vegetarian Menu, last year Casa Velas unveiled two 1,350 sq. ft. Wellness Suites for guests looking to relax, reenergize and de-stress.
