Veracruz: Red Snapper minilla – Snapper cooked with green olives and adobo and served on a corn tostada; Arroz a La Tumbada – Rice with seafood spiced with epazote and served in a hot clay pot.
 

 

Puebla (Mixtecas): Chalupitas poblanas — Fried tortillas with shredded pork and roasted green salsa; Almond Pipian – Slow roasted chicken with toasted almonds.

 

Yucatan: Papadzules – Tacos of chopped hardboiled eggs covered with pumpkin seed salsa; Stuffed Cheese – Gallo cheese filled with ground beef, almonds, capers and raisins; Almond Cognac cake.

 

Jalisco: Red Chicken Enchiladas; Tortas ahogadas – crusty bread filled with pork carnitas in arbol chili sauce; Candied Pumpkin and Coconut Sweets.
