Karla Enciso (Pueblito, Mayakoba)

A proud Mexican cook and gastronomic entrepreneur. She is an Industrial Engineer by profession, a chef by conviction, with a great passion for culinary arts, as well as for the rescue of the Mayan and pre-Hispanic cuisine of Quintana Roo, which has led her to be part of the project Sustainable Fisheries and Social Responsibility. She has progressed her experience after several years serving and leading restaurants of her own creation, like Manyee of Cancún and Aroma Cilantro. Enclosed by fruits, freshly harvested fine herbs and cheeses from the region that produce textures, flavors and a unique style that seek to create a harmonious festival in the palate of diners. This passion and exquisite gastronomic talent have led her to become the Executive Chef of Pueblito Mayakoba which she carries with Mexican pride.
Humberto May (Chaká, Grand Velas Riviera Maya)

A Mexican native, Chef Humberto May began his career in several prestigious hotels in Cancun and Riviera Maya. Throughout his professional career has acquired an array of knowledge, techniques, and flavors. His main focus is French cuisine as he has worked with renowned chefs from this country, and due to his splendid participation in various important events such as special dinners for La Chaîne des Rôtisseurs, Le Goût de France and The Best Of France, has obtained several awards.
Thanks to his talent, combinations, flavors and, above all, human warmth he has become Chef of the Chaká restaurant of Grand Velas Riviera Maya, where he offers a menu of Yucatecan specialties, showing pride in his roots and the traditional flavors of the place where he grew up.
Óscar Segundo - (Xokol, Guadalajara)

A splendid chef of mazahuas origins who seeks to express himself through various flavors and textures; carried out his training in the Center of Gastronomy and Sazón located in Toluca, State of Mexico. During his professional career, he has worked vigorously to make his way in the national gastronomic world. He has been part of restaurants of high stature such as La Leche, Almacén Gourmet in Puerto Vallarta and El Hueso Restaurant in Guadalajara.
He was honored to represent Mexico in the city of Milan, in the S. Pellegrino Young Chef 2018 international cuisine contest and is currently part of the Xokol project, a restaurant that seeks to revive the consumption and production of Creole maize, working hand in hand with his peer project, Ajumú, a kitchen workshop, where research, conservation of techniques, ingredients, and products of the area of Jalisco and the State of Mexico are carried out.
Nahúm Velasco (Cocina de autor, Grand Velas Riviera Maya)

Enthusiast of knowledge and experience, a virtue that took him to the Cocina de Autor in Playa del Carmen, where he had the privilege of working under the leadership of Xavier Pérez Stone, an extraordinary breakthrough in his personal life and professional career.
He collaborated with chef Rasmus Kofoed in his Geranium restaurant in Copenhagen and later, back on Mexican soil, he was part of Martín Berasategui's Passion restaurant. Thanks to his talent, passion for gastronomy and, of course, a commitment to keep learning, he received the invitation of Xavier Pérez Stone, Mikel Alonso and Bruno Oteiza to lead Cocina de Autor of Grand Velas Riviera Maya, where he seeks to enrich his creativity, respect the product, polish the techniques and, above all, satisfy diners with exquisite dishes, worthy of Cocina de Autor.
