Designed by Chef Fernanda Rábago, our innovative holistic menus area designed to heal, revitalize and energize the body with fresh, organic foods that contain nutritional catalysts and anti-oxidants. Originally from Guadalajara Jalisco, Chef Rábago began her career at the prestigious Le Cordon Bleu in Paris, where she became a Chef of Gastronomy and Fine Pastry. Following, she worked in acclaimed restaurants and hotels in London, Paris, Canada and Guadalajara, creating menus of gourmet food, fine pastry and beverages, and developing a curriculum for nutritional classes. She obtained her Master's degree in Yoga, as well as studying reflexology and holistic massage.

After a spiritual and culinary journey traveling through India and Thailand, Chef Rábago discovered the philosophy of using food to heal the body. She embarked on a project of creating healthy, all-natural menus which has been implemented during workshops at the Escuela Culinaria Internacional (International Culinary School) in Guadalajara, in her office in Puerto Vallarta (Mangala) and now at Velas Resorts. Utilizing the creative menus of Chef Rábago, the culinary team at Casa Velas creates personalized menus for the health, fitness and wellness of our guests.
